Appassimento is an age old traditional Italian winemaking technique where the grapes are dried in airy rooms before fermentation, resulting in wines of enhanced complexity and richness. Winemaker Alessandro Michelon sources ripe Corvina and Merlot grapes for this excellent example before ageing the wine for 8 months in French and American oak barrels. Please
